Chicken and Veggie Pie - a family favourite!

One of my family favourites - 
Chicken and Veggie Pie.

                     

Pastry - Thermomix Shortcrust Pastry from the Everyday Recipe book. 

Before I had a Themomix I used frozen sheets of puff pastry found at your local supermarket.

4 chicken breasts
1 large brown onion
2 large carrots
4 celery sticks
1/2 cup of frozen corn
1/2 cup of frozen peas 
Teaspoon of garlic
Your chice of fresh/dried herbs
2 big table spoons if flour
3/4 cup of chicken stock
1/4 cup of cream

Brown your chicken (but don't cool it through), then add all your carrots and celery, herbs and galic. Cook until sautaude. Add your flour, mix through and cook for 2 minutes, then add your chicken stock. Bring to the boil, then simmer until sauce thickens and chicken is cooked through.
Add your frozen peas and corn and cream. Simmer until pie filling consistsncey. If it doesn't thicken as much as desired. Dissolve 2 teaspoons of corn flour in a teaspoon on water and add to filling, bring it back to the boil them simmer.

Cool your pie mixture before pouring into already prepared pastry dish, add lid and cook for 45mins in a 180* oven.
