Healthy Coconut Rough

If you love coconut rough like me... you will love this healthy alternative!!! 

200gm Almonds
250gms of dates
65gm shredded coconut
20gm cacao powder
Pinch of salt
20gms honey
70gms coconut oil




For the Thermomix uses -

Grind the almonds for 8 seconds on speed 7
Add pitted dates, coconut, cacao powder, salt and honey chop for 30 seconds on speed 7
Add coconut oil and mix for another 20 seconds on speed 5
Either roll into bite size balls or press into a baking dish. Refrigerate or freeze.
If you have chosen to make it into a slice you will need to cut it into bite size squares.

If you're not a thermomix user, you could use almond meal instead of almonds; and desiccated coconut instead of shredded coconut and add all the ingredients (make sure you pitted dates and finely chopped) and give them a good mix together.

Serve cold.

Perfect for a sweet treat with a cup of tea after dinner! YUMMO!
