Hedgehog Meatballs

While Liz was down visiting she made 'Hedgehog Meatballs'... I cant say I love meatballs or rissoles... Mum use to make them when we were kids and the were always ...lets say 'well cooked'.... more like 'over cooked' or even 'burnt' ...Mum liked everything 'well done' :) But I must say I enjoyed these Hedgehogs :) ... And they are easy peasy to cook!


So you will need.
1 medium finely chopped up onion
Approximately 600gms Beef mince  
Just over half a cup of uncooked rice
Herbs...  We used basil.

Give it all a good mix together with your hands and then roll into medium sized balls and place in baking dish.


Then pour over one can of Tomato soup
Fill the same can up with water and pour that over the top of your meat balls.


Then just cook them in the oven on about 180 degrees for about 40 minutes... 
The rice will soak up the liquid and you end up with very nice, moist meatballs with a tomato sauce coating! Yummo!!

You could serve these with vegies, on mash potato or on pasta!! Too easy!!
You could also add grated carrot, zukinni or diced mushroom to the mince mixture and add your vegies that way... (so the kids cant see them)

We had such a great time with Liz, Stella, Max and Lacey... they left about 9 on Thursday morning... I was hanging out the washing at about 10... walked into the living room to this...

...Luke totally crashed out on the lounge!! Worn out from the last few days of playing, playing and playing!!
